Sweet Potato Pie

Ingredients
3 sweet potatoes
1/2 cup butter, softened (115g)
1 tablespoon vanilla extracts (15 ml)
2 1/2 cups white sugar (565 g)
1/2 teaspoon ground nutmeg (2.5 g)
4 eggs, beaten
3/4 cup evaporated milk (180 ml)
2 unbaked 9 inches pie crusts

In a large pot, bring water to a boil. Add sweet potatoes and cook until tender but still firm, for about 30 minutes.

Drain, cool and peel potatoes, then mash thoroughly. Preheat oven to 350 degrees F (175 degrees C).

In a large mixing bowl, mix sweet potatoes, butter, sugar, vanilla and nutmeg.

In a small bowl, beat together eggs and milk. Blend this mixture into the sweet potato mixture.

Pour into pie shells and bake in preheated oven for 60 minutes, or until golden brown.

Remove from oven and let it cool.

Extra tips
Add ½ teaspoon of cinnamon before baking the mixture for a much flavorful result.
